Ingredients
- 3 eggs
- 1 tsp salt
- zest of 1 lemon
- 1/2 cup honey
- 1 3/4 cups sugar
- 1 1/2 cups milk
- 2 1/2 cups flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup canola oil
- 3/4 cup olive oil
- fresh berries
Directions
- Preheat oven to 325°F.
- Mix the eggs and lemon zest in a stand mixer on medium speed for about 30 seconds.
- While running the mixer, drizzle in the honey, combining for another minute.
- Slowly drizzle in the canola and olive oils, followed by milk.
- Turn off the mixer and add the dry ingredients.
- Resume mixing on medium speed for 2 minutes or until batter is smooth and thinned.
- Line a 9-inch square cake pan with parchment paper (for ease of removal).
- Pour the batter into the pan and place in the oven for 45 minutes.
- Remove the cake from the oven and allow to cool on a rack. Cut it into even squares and place on a plate in a single layer. Store the cake in the fridge until ready to serve.
